Little fun fact about me, I loooove bananas! They taste great, they’re decently filling and they’re cheap! Bananas have always been one of my top fruits but ever since moving towards a vegan lifestyle they’ve become a vital part of my diet. The best part about bananas is you can do SO much with them, meaning you can expect many more banana incorporated recipes in the future! 😉
Today I’ll be sharing with you my favourite banana muffin recipe, that takes less than an hour to make and is perfect for a quick grab&go breakfast or snack.
What you’ll need:
– 4 medium bananas
– 1 tsp of vanilla
– 1/4 cup of brown or white sugar
– 1/2 cup of melted coconut oil
– 1 tbsp of ground flax seeds
– 1 1/2 cups of flour
– 3/4 cup of steel cut oats
– 1/2 tsp of salt
– 1/2 tsp of baking powder
– 1/2 tsp of baking soda
– 1/2 cup nut or fruit (or if you want to be extra, both) of choice
Step 1) In a bowl, combine your flour, oatmeal, flax, salt, baking powder and baking soda.
Step 2) Blend your 4 bananas, then add in your sugar, vanilla, and coconut oil, then blend again until smooth.
Step 3) Pour your blended wet ingredients in the bowl and begin to mix.
Step 4) Add in your nut or fruit of choice and mix until everything is combined properly.
Step 5) Have your oven preheated to 350 F/180 C, line your muffin pan with parchment paper cups, add mixture to cups, and let cook for 27-30 minutes.
And there you have it, super easy and quick! The batter takes me about 15 minutes to make, and I usually get 14 or 15 muffins out of it. Hope you enjoy!
